Fig Tart with Goat Cheese and Balsamic Vinegar


Ingredients:

1 sheet Puff Pastry store bought

2 to 3 cloves of garlic peeled and sliced thinly

1 big Red Onion, sliced thinly

1 log of Goat cheese broken into pieces

1 packet fresh Figs, sliced into halves or quarters

2 to 3 Tablespoons of Balsamic vinegar

2 Tablespoon Olive oil

1/4 cup Basil, torn into pieces

Salt 3/4 teaspoon

Thaw the pastry in the refrigerator overnight or thaw the pastry on the counter. Smooth the pastry and make into a rectangle.

Start the oven at 425 degrees.

In a pan add 1 tablespoon olive oil and cook the sliced onions until the onions become caramelized. Add half of the balsamic vinegar to the onions. A pinch of salt. Add some freshly ground pepper. Let it cool.

Place the pastry sheet on the tray. Slightly make edges to the pastry with butter knife. Do not tear it.

Now place the cooled caramelized onions on the pastry sheet. Add sliced garlic, fresh halved or quartered figs on the top of the onions and garlic. Now add broken goat cheese.

Add the remaining olive oil and place in the hot oven.

Cook in the oven for 18 to 20 minutes. Remove the tart when it is cooked. Add Basil and cut into individual pieces and serve.
